    Ingredients

    • 1 1/2 pounds sweet potatoes, peeled
    • 1 package active dry yeast
    • 6 tablespoons plus a pinch of sugar
    • 1 cup milk, room temperature
    • 1/2 cup (1 stick), plus 3 tablespoons unsalted butter, melted and cooled, plus more for bowl and plastic wrap
    • 3 large eggs, lightly beaten
